Black cowboy is basically African American Freed Man after the Civil War, they become quite good at their job by earning the trust of the herd that they are herding, so black cowboy usually approach the herd by themselve instead of in group because it would spook the herd. Sorry black cowgirl I dont know =(.  I think they take the name for themselve because how efficient black cowboy at their jobs were and also a lot of people go back to farming after the civil war.
